The Argentinian herd consists mainly of Aberdeen Angus and Hereford cattle, two real meat breeds. The cattle roam freely in the vast pampas and enjoy the abundant, tender grass.

In the Cosina (Argentinian Kitchen), the parilleros (chefs) are masters in preparing meat on the parillada (charcoal grill). The Argentinian kitchen mainly processes the following parts of the Novillo (ox);
Bife de Cuadril, a hearty but tender steak from the thick loin. Bife Angosto, the prime rib with the right fat edge for the taste. Bife de Loma, the butter-tender tenderloin. Bife Ancho, a mouthwatering steak. By grilling the meat exclusively with some salt and chimichurrie (grill oil) on charcoal, the natural taste is fully preserved.
